Simple, healthy & guilt free Blueberry Bread

We all need a treat from time to time, let's just make it a healthy one.
This blueberry bread hits the spot when you're looking for a sweet treat without the guilt. Packed with slow release carbohydrates, fibre and protein, this bread makes a great treat for yourself and the kids.
Preparation Time: 15 Minutes

Ingredients:
1 cup blueberries (I use Coles frozen blueberries)
1 cup wholemeal flour
1/2 rolled oats
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 stevia or honey
4 eggs
1 cup natural yogurt (I use Chobani for maximum protein)
1 teaspoon vanilla essence

Method:
Heat oven to 180 degrees and line a loaf tin with baking paper
Mix flour, oats, powder and cinnamon
In a separate bowl whisk stevia, eggs, yogurt and vanilla
Once combined slowly add the wet liquid to the dry
Gentle fold the blueberries into the mixture and pour the batter into the baking tin
The loaf takes approximately 50 minutes to cook. The loaf is ready once it has browned on top and smells delicious
Blueberry bread can be kept fresh or cut up into 8 pieces and stored in the freezer for another day.
